I use "we're back" loosely

Bear and I got back late last night from our weekend jaunt to the New Hampshire seaside.

It was relaxing, full of fun and friendship and ever so beautiful.

Stay tuned for more gorgeous seascapes; complete with lighthouses.

Oh how I love lighthouses.

Right now though, I'm unpacking and finishing up some work from this morning's shoot and doing laundry, lots of laundry, so posting more pictures will have to wait until tomorrow.

In the meantime, check out this recipe for  Sweet and Sour Chops.  It's easy, tasty and got compliments on the dinner table last week which made it happy.

 Sweet and Sour Chops
(adapted from Shirley Heston)
1/2C flour
1/2t salt
4-6 pork chops (mine were bone-in)
2T olive oil
1 can (20oz) crushed pineapple
1 chopped green pepper
1C sugar
2T cornstarch or arrowroot
1C chicken broth
1C apple cider vinegar
1/3C ketchup
1/4C water

Combine the flour and salt in a pie plate and dredge the pork chops in the mixture until coated.  Heat oil in a pan and brow the chops until browned.  Transfer to a greased 13x9 baking dish and top with pineapple and pepper.

In a saucepan, combine remaining ingredients.  Bring to a boil over medium heat; cook and stir until thickened.  Pour over chops and bake, uncovered, at 325* for 40-45 mins.  Serve over rice.

Sounds like a great recipe. Excited to see the pictures from your trip. I too love lighthouses. It was a supposed light house that led to my husband and I's first kiss :)
